But it also requires an enormous amount of effort, coupled with an intense passion, to reach the coveted threshold when you make really good sausage, the kind of sausage that impels people to take the second and third bite, the kind of sausage people will remember you for.

When a meat grinder is used, the meat has to first be ground according to the sausage recipe instructions. Then it's mixed together with specific ingredients to form a proper sausage batter, which is sent through the grinder one more time to fill the sausage casing. The continued churning of the auger turns the meat batter into mush and changes the consistency of your finished sausage.

Sausage stuffers (or fillers) are the best tool available for stuffing sausage meat into a wide variety of casings and/or poly meat bags. A sausage stuffer, on the other hand, doesn't effect the consistency in the least bit, because it moves the meat through an open cylinder effortlessly, with only minimal air pockets. Dakotah Jerky Adapter

Transforms the Dakotah Sausage Stuffer into a jerky and snack stick making machine in a matter of seconds. Just choose an insert and tap it into the adapter head, screw the head into the Dakotah Stuffer and you're ready to go.

Forms two continuous (3/16" Wide x 3/16" Thick) flat strips of ground jerky at once, or three continuous (3/8" Diameter) snack sticks at once, or two continuous (1" Diameter) skinless links at a time. There's no limit to the scrumptious treats that can be produced with the  Dakotah Jerky Adaptor - including ground jerky strips, jerky sticks, pepperoni sticks, snack sticks, beef sticks, pepper sticks, skinless breakfast links, skinless franks, skinless Polish and much more.

Sausage Stuffer Video
Insert the sausage stuffer piston into the cylinder with the flat side of the piston facing outward.

Pack sausage mixture tightly into the sausage stuffer.

Secure the lock nut groove and screw the tube and nut assembly into the sausage stuffer.

Screw on the head cover when the cylinder is filled with meat.   Slide on soaked fibrous casing.

Open the water source 1/4 turn while holding the casing tight to the sausage funnel.

Keep the sausage funnel buried into the sausage meat as you fill the fibrous casing.

Continue to keep the sausage funnel buried into the sausage meat as you stuff.

Fill the fibrous casing to about one inch from the end. Twist the casing tightand hold.

Crimp the end of the fibrous sausage casing shut with hog ring pliers.

Stuffing hog casings is a snap.
