Karen and husband, Eldon, are no strangers to sausage and jerky making. Eldon began his apprenticeship as a journeyman meat cutter in the early 70's moving on to a commercial sausage kitchen years later. Eldon leaned a great deal from the old-world sausage maker he trained under. The couple moved to Idaho in 1980 and opened a custom sausage kitchen which they operated for nearly 10 years. During their tenure they produced a pair of successful processing videos titled "Easy Sausage Making" and Easy Deer Cutting".
Health problems forced
Eldon to opt out of the sausage kitchen, after which they started
Eldon's Products, a thriving sausage and jerky supply business.
During that time, Eldon and Karen authored the

and
98 Ways to Cook Venison
Both are available on this website by clicking on the above links. Recurring health problems forced the couple to sell Eldon's Products in 2003. The good news is that Karen is still going strong and with help from Eldon has improved the original Dakotah stuffer.
